    Olio Cazzetta

    The Cazzetta family retraces the steps of the past through the evolution of a passion.
    Francesco Cazzetta, owner of the company and his children Raffaele and Roberto, continue a legacy of tradition and experience of five generations. Everything has been developed by highlighting the indisputable link between the teachings of previous generations, to guarantee and safeguard traditions, with a keen eye on innovative research to improve the quality of the product. "Innovating in Tradition" is the philosophy of the Cazzetta Company: this link between old and new ensures that new technologies and market trends do not supplant tradition, an important heritage both for culture and for the certainty of quality. The strength of the Cazzetta family is the concept that olive oil is no longer just a simple condiment, but is a product with a dignity in its own right, just as is true for wine. The processing of Cellina di Nardò and Ogliarola salentina olives takes place with new machines aimed at safeguarding the healthy principles handed down by the great-great-grandfather Francesco, the great-grandfather Raffaele and grandfather Feliciano.

    Production


    The agricultural activity of the Cazzetta company is based on the management of 300 hectares of olive groves owned by the family, which is conducted through the most innovative techniques of cultivation and harvesting of olives. The company boasts a multi-level organizational structure, each with a high degree of specialization which allows it to oversee the entire production chain:
    - The Cazzetta Farm: focused on the direct management of the company-owned olive groves, respecting tradition and the environment. A considerable landed estate with extraordinary innovative characteristics, ideal for the development of the Ogliarola salentina and Cellina di Nardò cultivars from which an extra virgin olive oil, rich in natural antioxidants, is produced.
    - Cazzetta Oil Mill: specialized in the processing of its own and third-party olives. With painstaking patience, the olives are checked through all the phases of the production chain. The processing takes place within 6-12 hours of harvesting using cutting-edge equipment and all the processing phases, from crushing to centrifugation, follow one another continuously, in a healthy and temperature- controlled environment.

    Products


    The final stage is the Azienda Terra d'Otranto s.r.l .: a laboratory specializing in the bottling and marketing of extra virgin olive oil. Particular attention is paid to the containers and the way of preserving the oil so that this does not alter but rather maintains the aroma and the organoleptic qualities of the oil over time. For small batches, the packaging is in dark glass bottles in order to guarantee the consumer a craftsman care of the product and an optimum conservation.
    The company thus intervenes in all stages of olive production and processing, guaranteeing the traceability of a MADE IN ITALY product.
    The Cazzetta company pursues programs and environmental sustainability measures, through eco-compatible architectural choices, implementing measures to increase energy efficiency, enhancing the policies of recycling and reuse of waste and producing energy from renewable sources
